The Hôtel Vallon de Valrugues, a family-run establishment since 1976, is now home to this new fine dining restaurant. Dishes inspired by contemporary French cuisine make up the multi-course set menus, which include a vegetarian version. The inventive plates are followed by complementary smaller creations; seaweed runs through the menu as a recurring seasoning. Mediterranean murex are featured in three subtle dishes: sea snails topped with a potato emulsion, a crispy tartlet with diced murex, and green asparagus in a light breadcrumb coating. The catch of the day, served bouillabaisse-style, showcases a grilled slice of leerfish, accompanied by fennel and a spicy rouille. The terrace boasts a magnificent view of the garden.
