This 18C farmhouse in the Alpilles, near Saint-Rémy-de-Provence was once the home of artist Roger Bezombes, whose colourful mosaics still adorn the floor of the main lounge. Today, the mas welcomes chef Sylvestre Wahid back from his time in the mountains. His tasting menu is built around signature dishes like salt-baked beetroot with foie gras, pigeon roasted on the bone, and candied lemon and seaweed. Grounded in salt-crust cooking techniques, the dishes are enhanced by a range of exotic spices – cardamom, star anise, Timut pepper, Sichuan pepper – presented at the table and freshly ground to order. The hushed and intimate dining room has just a handful of tables. Five guestrooms complete the experience.
