On the terrace shaded by plane-leaved mulberry trees and overlooking the large swimming pool surrounded by a Mediterranean garden, it is a joy to hear the song of the cicadas (the "canto cigalo"). This restaurant – Le Vallon de Valrugues's second – puts fine ingredients centre stage in a relaxed atmosphere. By working closely with small-scale fishers, the chef is able to showcase fresh catch – a case in point is the superb wild sea bream. The lunch menu is more concise than the extensive dinner menu, which includes sea bass a la plancha with sauce vierge, Provençal-style aubergine papeton, Alpilles lamb shoulder confit with fresh herbs and a sweet spice condiment.
