Chef Fanny Rey is at the helm of the kitchen of this grand old Auberge on the ring road that skirts the old ramparts of this picturesque town. In a striking designer decor (curved white ceiling and exposed stone walls), Rey skilfully rolls out lyrical market-fresh cuisine, as she elevates the ingredients of the Alpilles in menus with seafood and plants as a common thread. Rey forages for some of the herbs and plants herself. Her partner Jonathan Wahid, an accomplished pastry chef and former French dessert champion, has a knack for showcasing the sun-drenched produce of Provence, such as figs and strawberries; his grilled vanilla, carrot and Caume thyme dessert is quite unforgettable.
