Just a short walk from the Basilica of San Benedetto, which was rebuilt after the earthquake, the restaurant is situated within the elegant Palazzo Seneca hotel. A series of dining rooms leads to the elegant Vespasia dining room, where chef Fabio Cappiello makes use of Umbrian culinary specialities – olive oil, cured meats, lentils, Cannara onions, river prawns and fish, lamb from the Sibillini Mountains and, of course, the finest black truffles (extraordinary with umbricelli) – to create innovative and enticing dishes. At least twenty-four hours before your meal, you choose what you’d like to eat from the à la carte dishes or the tasting menus (Vespasia, Terra, Acqua, Orto), before indulging in a superb dinner in the heart of this gem of a town.
