Just outside Cortina, yet already surrounded by meadows, it is here, in a dining room with a Dolomite-inspired atmosphere, that Riccardo Gaspari’s cuisine embodies the culinary essence of the Ampezzo and Alpine regions. On his farm, cattle, goats and pigs are reared with respect for the animals; vegetables are also grown and cheese is produced, which are then used to meet some of the kitchen’s needs as part of a waste-reduction initiative. The dishes are delicious and bursting with flavour, starting with the famous whipped butter. It’s a must-visit for anyone keen to discover the local culinary delights.
