Diners feel at one with the surrounding nature in this light-filled, wood-framed orangery. In this unique setting, charming hostess Marjolein and chef Mark express their love for Achterhoek. Fine regional produce, ingredients from their own kitchen garden and intense sauces shine in the contemporary surprise menu. The chef has the sensitivity and technical skill to let the seasons speak, enhancing the quality of local ingredients with international nuances. One dish that impressed was the delicately cooked langoustine, given centre stage in a composition with tomato and soy jus, a mayonnaise and jalapeño cream and green curry sauce. For additional depth, the langoustine was topped with lardo, seaweed powder and wasabi.
