The name Lokaal – Dutch for "classroom" – is a nod to the schoolhouse past of Villa Ruimzicht, the hotel that is home to this elegant restaurant with its chic yet homely feel. But the name means much more than that: it also reflects the mindset of Bjorn Massop and his team. They source everything from vegetables to meat and fish from small-scale local suppliers who share their values. The education continues at the table, with each course accompanied by a card providing more information about those suppliers. Preventing waste, working with the seasons and numerous other considered choices fuel Massop's creativity. He has mastered classics such as bouillabaisse and ceviche, which he reinterprets in line with his own vision. Then there is his bietstuk (a play on the Dutch words for beetroot and steak), with a velvety rapeseed beurre blanc. The set menu is a celebration of the riches of the Achterhoek.
