The cuisine strictly follows the rhythm of the seasons, creating original dishes that are deeply rooted in local identity, such as the delicious spiced aubergine with almonds and fig leaves. Beyond individual creations, the common thread is the pursuit of flavour and balance. As well as the à la carte menu, guests can choose from three different tasting menus, which also include dishes created specifically for these menus.
