Ivan Baretti, born in Florence and who trained at L’Arpège in Paris, blends his command of Italian tradition with a contemporary Gallic twist. Baretti’s expertise, skill and flair are harnessed to coaxing out the best of fresh premium produce. Highlights include Piedmont-style ravioli filled with guinea fowl, 36-month-old parmigiano and a rich game sauce.
