A blend of modernity and tradition, the score adds an innovative spin to a lineup of classics, illustrated by risotto of mussels, celery, saffron mousse, passion fruit gel or a carpaccio of giant red shrimps, subtly marinated in yuzu, lemon zest and fresh herbs and paired with stuffed carrot rolls and a slightly sweet carrot sauce.
