As the name of their restaurant implies, chef Nino and hostess Aysen are dedicated to serving up fish and seafood in their charming restaurant, which feels like an upgraded fisherman's hut. Their principal supplier is sustainable fisherman Hendrik Kramer from Urk, whose catch largely dictates the menu, which also features vegetables from their own garden. Their emphasis on local sourcing yields ingredients of remarkable quality. The chef knows how to build depth into his sauces, and his accompaniments reveal a fondness for intricate preparation.
