In their impressive open kitchen, the young chefs demonstrate just how compelling plant-forward cooking can be today: ingredient-led, carefully considered and packed with flavour, with a clear love of cooking over an open fire. Confit and grilled celeriac is glazed with Dutch miso, its intensity reinforced by the umami nuances of wild garlic capers and a sweet-and-sour fruit coulis of dried strawberry.
