At a remove from Groningen's bustling city centre, Restaurant Luwte is a haven of calm, with hostess-sommelier Caroline and chef Falk inviting you to unwind. Opt for a table at the front for a view of the completely open kitchen, and place yourself in the hands of this ambitious duo. Falk prefers to work with ingredients from the north of the Netherlands – from seaweed and beef to vegetables – showcasing them in occasionally daring creations. For example, he sources impeccably fresh sea bass from the North Sea, cooks it until just translucent and tops it with salmon and trout roe, adding roasted tomato and black garlic cream, plus a bright, tangy vinaigrette infused with vanilla. The chef has a penchant for plant-based dishes (a meat- and fish-free set menu is available) and draws inspiration from the Dutch soil.
