The restaurant at LaM (Lille Museum of Modern, Contemporary and Outsider Art) is set in a minimalist space featuring panoramic windows that open onto a roof terrace. Florent Ladeyn, a well-established figure in northern France, remains true to his culinary identity as a regional chef, drawing on the pantries of the Hauts-de-France and Flanders. The single set menu, with its intentionally cryptic titles, presents his modern take on cuisine infused with nods to tradition. The chef also introduces more creative elements to the dining experience, at times inspired by the exhibiting artists.
