Within the enchanting Hotel Timeo, a handful of tables on a bougainvillea-adorned terrace overlooking Taormina, the Bay of Naxos and Etna: against this backdrop of extraordinary beauty, chef Roberto Toro presents a cuisine that unites the flavours of Sicily with international techniques and inspirations, without losing its connection to the local area. The offering unfolds across several tasting menus dedicated to fish, meat and vegetables – alongside the option of composing a three-course à la carte menu. Among the dishes that most impressed our Inspector, the Prawn in Two Textures stands out: the Sicilian crustacean is served raw with tomato sauce, almond cream and caviar, whose refined savouriness enhances the natural sweetness of the flesh, while a frozen grapefruit delivers a pleasantly citrus freshness to the finish. The experience is completed by impeccable service, capable of uniting professionalism, spontaneity and genuine hospitality. The wine list, with over 400 labels, celebrates Sicily without forgoing a rich Italian and French selection, and includes interesting productions from small local winemakers.
