This terroir-driven cuisine sources everything from within 50km upstream and downstream along the Meuse. It is an ode to Limburg's produce, which is given every opportunity to shine. For example, the chefs slowly cook brook trout from the Commanderie 7 fish farm, retaining a pleasing bite, and serve it with a parsley coulis, horseradish cream, trout roe and tender shoots. Expect intricately crafted dishes with lively, international nuances that highlight the wealth of local ingredients. This light-filled restaurant is part of Van Oys Maastricht Retreat, whose wooded grounds provide a beautiful backdrop to the superb terrace.
