Guido Braeken creates his distinctive culinary world with outstanding ingredients, classical depth and judicious exotic touches. His cooking is technically precise, vibrant and expressive. He creates visually stunning dishes that command your attention from the very first amuse-bouche. As soon as a creation such as crisp nori filled with tuna tartare, smoked mayonnaise and caviar arrives, you know that intensity will set the tone. And be sure to try one of the langoustine dishes by this master of sauces. One highlight is an impressive langoustine tail, cooked to perfection on the Japanese barbecue and finished with lime zest, a vin jaune hollandaise and a winter truffle and shiro kombu dressing.
