In this restaurant on the first floor of a gorgeous timber and stone-built hotel, meticulous attention has been paid to every last detail of the Alpine decor: backlit ceiling beams, contemporary pendant lights, floor-to-ceiling windows, and a wall-to-wall bookcase. Sicilian chef Giuseppe Ruggiero crafts food that reflects his extensive travels (Asia, South America, Turin, Paris), with set menus dedicated to South America, the Mediterranean and Asia, making no bones about using produce from further afield. The South American set menu showcases skilful technique and top-notch ingredients: wild turbot, squid, suckling pig. With its many contrasts, the squid tagliatelle, served with a chicken consommé double with yellow chilli, is a hit.
