The restaurant of the iconic Hôtel Martinez, glitzy haunt of celebrities during the Cannes Film Festival, pays a vibrant tribute to cinema, one of chef Jean Imbert's passions. Lined in wood panelling that wouldn't be out of place on a yacht from Hollywood’s golden era, the decor overflows with authentic movie props and posters. The menu is written like a screenplay, illustrated with storyboards. Under the impetus of director Imbert, chef Christophe Nannoni, a longstanding crew member here for over a decade, works closely with head pastry chef, Loïc Voron. The sea and Provence top the bill: squid and tuna belly braised in embers, piquillos and wine sauce; lamb cooked two ways, green asparagus, confit shoulder and a succulent gravy; vanilla-laced palmier made to order. Lights, camera, action!
