Mathias Dandine made his childhood dream come true when he became chef of this opulent 18C mansion set in grounds planted with centennial trees and far from the madding crowd. The chef’s score is perfectly suited to the setting, as he celebrates Provence with breathtaking skill. His unfussy, pared-down Mediterranean cuisine shuns fancy frills and definitely doesn’t seek to impress, even down to the desserts, as is illustrated by his contemporary take on the baba. Yet behind this deceptive simplicity, the chef demonstrates virtuoso skill in terms of cooking, textures and balanced flavours. In fine weather, make a beeline for the refreshingly shaded terrace.
