Set in a luxury hotel complete with a golf course, spa and pool, L’Aupiho pays a vibrant tribute to regional traditions. This passion for Provence is however the work of a youthful Belgian chef, Lieven Van Aken, who boasts a stint with Michel Guérard under his belt. Van Aken’s modern Provençal score is spot-on and daring: tomato curry, celery sticks, gazpacho and raspberries; locally caught fish, modern Dugléré sauce; saddle of rabbit with langoustines, green peas and green chilli. Most of the veg comes from a permaculture garden. A pergola of sweet-scented jasmine and a fountain set the scene on the magical patio.
