Oozing with character, this historic stepped-gable building (1555) by the harbour in Goes leaves no one unmoved. The open fireplace, beautiful waterside terrace, paintings... Karel V is a real gem. In the kitchen, the chef lets his experience do the talking, whether in his mastery of classic flavours, subtle refinements or the sheer generosity of his cooking. For example, he sears a thick plaice fillet briefly on both sides and gives it extra intensity with a beurre blanc sharpened by a spoonful of mustard, plus plenty of prawns and a fresh pea cream. You can put together your own set menu from the à la carte selection – though choosing between all those tempting options may prove difficult.
