Haricot. is the venture of three friends who met at De Librije and have now struck out as a trio. They have set up shop in the heart of Maastricht, in a cosy, wood-panelled restaurant with something of a French feel. Chef Mathijs and his team serve a set menu that demonstrates their mastery of the art of omission. Their cooking is accessible, but they also like to play with contrasts and vibrancy. Surprising ideas add an element of excitement. For example, a slender piece of pike-perch is slowly cooked to bring out its full flavour, then paired with a creamy, refined caramelised shallot sauce, a light broth made from smoked eel skin and a piece of eel topped with mustard seeds. This constantly evolving cuisine is also a feast for the eyes.
