In the wake of a lavish restoration, the owners have translated Sologne’s pastoral universe into what has become a historic regional landmark. The chef and his team are fans of an 18C handicraft, known as “stone cardboard”, which they called upon to embellish the interior. The food embodies a gourmet interpretation of the countryside, courtesy of the chef’s research into forgotten herbs and spices: grains of paradise, sand leek, angelica and lemon thyme. The score is legible, based on reassuring classical foundations and paired with succulent jus and sauces. Let’s not forget the knockout wine list that showcases some of the Loire’s top wineries.
