In a quiet side street in the heart of Romorantin-Lanthenay, this eatery, whose name pays tribute to the white birches of Sologne’s forests, sports a modern, low-key bistro-style interior. Chef Maxime Valleye, with stints at Georges Blanc and in his parents’ establishment under his belt, sings an ode to his region courtesy of premium produce which he frequently pairs with spices: focaccia with Cajun spices, or a starter of rock crab, watermelon and sea lettuce jazzed up with a curry and paprika mayonnaise. An impressive selection of wines by the glass, courtesy of the Coravin system, adds a final flourish to this portrait.
