Francis Mallmann, one of Argentina’s most emblematic chefs, is fanning the flames in the heart of this exclusive wine estate-cum-resort on a dinky Provençal-looking square near the art centre. Premium meat is grilled on the parilla, slow flame-roasted or smoked using traditional methods that the chef has been championing beyond his country’s frontiers: Mendoza beef empanadas, asado of beef ribs… The theatrical open kitchen pulls out all the stops, while the stylish, contemporary interior brings to mind an Argentinean hacienda. Wines from the estate and Argentina feature prominently and the vibe on the terrace is buzzy and vibrant.
