Danyel van den Bongard is a veteran of the Maastricht food scene. In his cosy, ever-inviting restaurant, he demonstrates his expertise in classic dishes with every service. He serves duck fillet with a robust sage-infused jus made from the bird itself. His playful side also comes through, for example in his creative take on vitello tonnato, which features tender octopus and a red pepper sorbet.
