Working hand in hand, Angélique manages the front-of-house while Tim runs the kitchen, in a bid to provide a personalised experience. Luxury ingredients enjoy the leading role on the menu and the chef might sign a high-flying combination of oysters and seaweed, caviar and a distinctive beurre blanc made out of curds.
