Arthur and Gideon first met while working in a kitchen and promised that one day they would open a restaurant together. Years later, with a wealth of experience behind them, they have realised that ambition by setting up this resolutely contemporary yet wonderfully intimate restaurant. It is clear from the enticing menu how much pleasure the chefs take in what they do. They remain true to their classical foundations while enlivening their dishes with exotic influences and vibrant flavours - just enough vadouvan to lend finesse and depth to a bisque sauce, or a delicately balanced combination of jalapeño and fermented tomato to give fish an extra kick: this is confident cooking. A fine addition to Haarlem's culinary landscape!
