Get ready to be pampered by a veteran couple: Hélène graciously supervises the dining room, while Kwinten crafts a subtle Franco-Belgian score that unveils his talent and craftsmanship. An example: ballotine of pheasant, salsifies and endives, flanked by an amazing sauce made out of the bones and enhanced with cognac and cranberries. There is also a vegetarian version of his seasonal set menu with several courses.
