Yamazato is an oasis of calm within the luxurious Hotel Okura Amsterdam. The minimalist design, natural wood tones and serene atmosphere transport you to the Land of the Rising Sun, an impression reinforced by the view of the Japanese garden and the ladies dressed in traditional yukata. A respect for tradition is evident in every detail. Yamazato was the first traditional kaiseki restaurant outside Japan to be awarded a MICHELIN Star. Subtlety is in the DNA of this cuisine. Ingredients, regularly flown in directly from Japan, retain their pure character, enhanced by carefully judged notes of spice, bright acidity and umami. A measured touch of yuzu chilli paste gives perfectly cooked, translucent fish just enough kick; a hotpot impresses with the depth of its clear broth and the beautiful marbling of the tender beef. Prepare for a whirlwind of sensations. Both set menus offer an exclusive insight into Japanese tradition, a sense of luxury that extends to the wine list – naturally including an excellent selection of sake.
