Once entered by carriages, the ancient courtyard of the St. Regis – generous in scale and dramatic in its proportions – has today been transformed into a refined winter garden. Among the sofas and armchairs embracing the cocktail bar – where the aperitivo is an almost indispensable ritual – this venue preserves a charm of another era, with precious marbles, carpets, plants and Murano glass chandeliers, while at the centre a pianist provides an elegant accompaniment to the atmosphere. In the kitchen, the chef navigates a line that balances contemporary ambition with classic reassurance, drawing on the Mediterranean tradition of both land and sea. The dishes stand out for their simplicity and attention to seasonality, with few ingredients elevated through precise technique and measured flavour.
