Above an upmarket seaside town filled with designer shops and cafés – and not far from their Villa Vest Badehotel – is this beautifully situated property that’s built into the cliffs and offers incredible views out over the beach and the North Sea. Chef Anders Holm is from the area, and his cooking gives pride of place to local seafood, whether that’s on the shorter three-course menu or the well-balanced, hyper-seasonal tasting menu. Said seafood comes together with meats bred by the owner and other top-notch produce in precisely prepared, highly creative dishes such as ‘kingfish, gooseberries, elderflower’.
