Part of Pillows Grand Boutique Hotel Maurits at the Park, VanOost Restaurant is housed in a lavishly converted university building dating back to 1908. Period features including authentic wood finishes and high ceilings harmonise elegantly with the fully open kitchen. From a seat at the counter you can watch Floris van Straalen channel both international influences and regional produce into intricate and imaginative cuisine. His delicate touch with flavour contrasts is demonstrated by his dish featuring langoustines cooked to perfection and glazed with katjang pedis and sambal, accompanied by a curry foam and sweet-and-sour vegetables. Before (or after) dinner, head to Fitz's Bar on the lower ground floor for an expertly mixed cocktail in a setting that transports you back to the Roaring Twenties.
