The Red Balloon evokes the Belle Époque, with an intimate air of mystery and an elegance that leaves no one unmoved. The chef draws on quality local ingredients, North Aegean influences and Mediterranean freshness to create his own distinctive culinary style. He reimagines familiar dishes such as beef tartare with Parmesan and cured egg yolk cream, or creamy pea hummus with wonderfully fresh seasonal vegetables, adding a contemporary edge that keeps the palate engaged.
