2026 marked the 25th year of operation for this stalwart of the Royal Tunbridge Wells restaurant scene. The softly illuminated clapboard house in which it sits is one of the oldest buildings in town and was once home to the eponymous author William Makepeace Thackeray. There's an air of formality to the service and the cooking has a classical base, in dishes such as potato-crusted halibut with wholegrain mustard croquette, monk’s beards, brown shrimp and tartare garnish. The moody first-floor private dining rooms showcase local art.
