Host Robert-Jan Nijland and chef Michel van der Kroft prove that one plus one can make three. They have transformed this former fisherman's cottage into one of the country's top restaurants. The decor is cosy and charming, with sleek lines, plenty of glass and black accents. Given the freedom to develop, Van der Kroft has repaid that trust by forging a highly individual style. His mastery of Escoffier's classic dishes is second to none. His foie gras and smoked eel terrine with aged balsamic vinegar and beetroot in various textures is sublime. Then there is his wonderfully indulgent dame blanche, bringing together almond, peach and white currant in various forms, with a lemon sorbet. He alternates such intense signature dishes with creations like succulent lamb fillet with a fine layer of fat, a meatball of sweetbread and lamb's tongue, a bright, tangy piccalilli emulsion, different textures of cauliflower and a deeply flavoured demi-glace made with aromatic voatsiperifery pepper. Van der Kroft reimagines familiar flavours with his own refined touch, often drawing on his special connection with Portugal. He enjoys coming to the table to present his dishes in person. He serves a warm pastel de nata with your coffee, and, at dessert, comes round with a jar of chocolate mousse and a wooden spoon. This heartwarming gesture speaks volumes about the genuine generosity that defines 't Nonnetje.
