This tiny, white-tiled counter restaurant seats just 30 diners a night over three sittings – and despite its simple appearance, it’s not a place to be underestimated. Chef-owner Carl Ishizaki has mastered his craft down to a tee and makes no concessions when it comes to his ingredients, which are of impeccable quality. His expertise and skilful cutting techniques are evident as he honours traditional sushi preparation methods, then serves all diners at the same time with panache.
