Having grown up in the world of Signum, Martina Caruso has transformed her family’s legacy into a personal vision: after training away from the island, she returned to Salina and now leads a team of nine, while her brother Luca oversees hospitality at the elegant establishment. In the kitchen, he interprets the local area with a contemporary sensitivity, making the most of produce from the vegetable garden and the sea, and playing with balance and flavour without distorting the nature of the ingredients. There are three tasting menus: Sigillo (9 or 12 courses) featuring the chef’s signature dishes, Oltremare – an eight-course menu dedicated to aged fish – a vegetarian menu and à la carte options. The wine cellar, with over 1,500 wines, stands out for its breadth and international outlook.
