With statues of Chinese warlords Guan Yu, Liu Bei and Zhang Fei, pagoda motifs and exquisite wooden chinoiserie everywhere you turn, the level of detail in the decor of this floating restaurant is extraordinary. Just a stone's throw from Centraal Station, Sea Palace, which has remained in the hands of the same family for over 40 years, resembles a palace from the Ming dynasty. The wide-ranging menu is an ode to Cantonese cuisine. Peking duck is a house speciality, served in fluffy buns with crisp roasted duck and hoisin sauce. The dim sum are equally impressive, whether steamed or fried, featuring succulent fillings and richly flavoured sauces. Authenticity remains a guiding principle here, even if guests now order via QR code and service robots help out front-of-house. Talk about an institution!
