Chef Nieves Barragán Mohacho has created something authentic and truly joyful with Sabor. There are three distinct areas: on the ground floor is the bar and, opposite, a counter serving dishes from all over Spain including fresh seafood from their in-house fishmonger; upstairs is El Asador, where you can enjoy specialities from Galicia and Castile. It's hard to resist the signature Segovian suckling pig roasted in the specially built oven, while the milk-fed lamb sweetbreads with capers are another standout. You’ll be licking your lips for hours.
