Today's culinary landscape is characterised by a shift towards plant-based, zero-waste dishes underpinned by long-established techniques such as fermentation and pickling. At Restaurant Vannu, Gijs Kemmeren gives his creativity free rein, incorporating all those elements into a multi-course set menu.
