Old Skool is, quite literally, an old school, but today it is first and foremost a stylish restaurant with a charming retro-modern aesthetic – think atmospheric lighting, herringbone parquet flooring, warm colours and bold artwork. In his cooking, meanwhile, the chef leans decidedly towards the new school, incorporating flavours from far-flung places and placing great emphasis on vibrancy. Succulent pheasant roulade, for instance, is accompanied by a Guinness jus that brings caramelised notes, alongside mustard seeds, a refreshing quince compote and fig cream. This cuisine is full of energy, and the enticing vegetable-led tasting menu is no exception.
