Inside, modern wood panelling blends with traditional whites and blues, and creates an elegance that is well-matched by the cooking. The concise à la carte – which can also be taken as a tasting menu – draws inspiration from the Danish larder, then adds some Japanese elements to an otherwise classic base to create dishes such as turbot with elderflower and asparagus blanquette sauce or candied Mikan mandarin with white chocolate namelaka.
