Now this trendy, laid-back restaurant – a seat at the bar is always a good option – has also made a name for itself in Alkmaar. As with its overseas namesake, the ingredients take centre stage. Chef Bram Haver draws inspiration from further afield to give the classics a little more flair, but his creativity is always measured. He knows how to give an Albufeira sauce real depth and richness, how brightly seasoned shallot can add just enough tension to a dish, and how to cook fish so that it is crisp yet succulent.
