Maxence Bouralha and Charles-Maxime Legrand were mates at hotel school, before they became brothers-in-law and then went into business together a few years ago. Quai N°4, appointed in shades of green and gold, has become the chefs’ stylish contemporary lair. They give free rein to their respective creative talents without falling into the trap of excess and their exquisite plating bears witness to their shared attention to detail.
