Peter Fridén presents his "New Nordic Japanese Cuisine" in the 17C Alte Kanzlei, tastefully designed by Axel Vervoordt. Located in a small side street, the beautiful building houses this elegant, upmarket restaurant as well as a boutique hotel. In the kitchen, visible through a glass sliding door, Fridén brings together three culinary traditions: he was born in South Korea, grew up in Sweden and trained in French cuisine. His six-course set menu, also available in a shortened version, reflects his personality through an intriguing mix of Asian-Japanese, Scandinavian and French elements. The "ikejime golden trout, whey, kohlrabi, yuzu", for example, impresses with the clarity of the individual flavours and the way they come together. Creative cooking is matched by exceptionally refined presentation. Individual courses and additional dishes can also be ordered à la carte, and the latter can be swapped into the set menu or added as extras. Carefully selected wine pairings by the glass draw on a list of over 1 000 labels; sake and kombucha are also served.
