Leaving Merano behind, a panoramic road that winds through apple orchards, chestnut groves and vineyards leads within a few kilometres to Castel Fragsburg, a historic seventeenth-century residence immersed in greenery. Here, amid the charm of South Tyrolean aristocratic architecture and an understated alpine elegance, the Prezioso restaurant finds its home. In the warmer months, the terrace suspended above the valley offers a spectacular view that contributes greatly to the evocative quality of the experience. The beauty of the setting is matched by a solid cuisine firmly rooted in the local area, built around its produce and clean, precise flavours. Freshwater fish such as Arctic char and trout appear frequently in the tasting menus, alongside preparations that celebrate the quality of the meats. Among the most convincing dishes, the veal served in two acts: first accompanied by roasted onion, tarte tatin and meat jus, then with an intense sweetbread served with onion cream and wild herbs, a mouthful of real character and gustatory depth.
