In the sleepy village of Hoeven, Walter and Vivian Pouwe greet diners with true Brabantian hospitality. Their modern, intimate restaurant boasts a striking open kitchen and a rear terrace that provides a pleasant setting for relaxed dining. The chef incorporates ingredients such as yuzu, tandoori and vadouvan into creative dishes that pack a punch. One highlight is the carpaccio of red and yellow tomato, lavishly adorned with artichoke, roasted pine nuts, confit Padrón peppers and a silky emulsion of oil and grated Manchego. After all those rich flavours, be sure to sample something from the cheese trolley – an intriguing selection of international cheeses personally presented by the chef with infectious enthusiasm.
